Monday Munchies: Peanut Butter Balls

Posted on January 23, 2017 at 9:25 PM by Jenny H

Feeling a little nutty today? Let's try some Peanut Butter Balls!

What You'll Need:
1 cup Peanut Butter
1 cup Almond Flour
1/3 cup Molasses
(Optional) Powdered Sugar, chopped nuts, coconut, or melting chocolate.

Tools You'll Need:
Measuring cups
Wax paper

Alright, meet back here when you've finished the scavenger hunt! (Hint: the Almond Flour can usually be found next to the gluten free items.)

Get started by measuring out the Peanut Butter, Almond Flour, and Molasses into a bowl. If you're having a hard time measuring the Peanut Butter, try a large liquid measuring cup. I have a four cup measuring cup that I fill with two cups of water, then add Peanut Butter until you hit the three cup mark. The Peanut Butter will not stick to the measuring cup.
Now start mixing! You can use your hands if you want (clean hands please). The mix will start out messy, but will turn into a mold-able dough in no time.
Now that you have your dough, start rolling it into balls, and place them on wax paper. I make about 1/2 to 3/4 inch balls.
You can then roll the peanut Butter Balls in which ever coating you like best. I've pictured chopped nuts, powdered sugar, and coconut. If you's like to coat them in chocolate, I suggest cooling the balls in the fridge before dipping them in the melted chocolate.

There you have it, Peanut Butter Balls. Got another coating in mind? Try it out, let me know how it tastes.
